I would like to ask for assistance with manually setting the schedule. Currently, when I set the available time from 8 AM to 5 PM on Monday, it applies to every Monday. However, I want to customize the times for specific dates. For instance, I want the schedule for Monday, May 13th to be from 8 AM to 1 PM, and for Monday, May 20th to be from 1 PM to 5 PM. How can I achieve this?

For this customization you will want to explore using Calendar Managed Availability (https://support.youcanbook.me/hc/en-us/articles/22224810603031-Setting-up-Calendar-Managed-Availability) this will allow you to setup specific events on your connected calendar that are marked as FREE with a title you choose. The YCBM system then will pull in only those events you have designated. This means you can have customization from the 13th and the 20th. Each days availability can be different.
This allows each day to have customized start times.
